INGREDIENTS

  • 1 french baguette
  • ½ cup mayonnaise
  • ½ cup pork or chicken liver pate
  • 1 cup shredded carrot
  • 1 cup shredded daikon
  • 1 cup vinegar
  • ¼ cup sugar
  • 2 tbsp salt
  • 1 cup cucumber strips
  • Cracked Black pepper
  • Coriander leaves

 

Grill Pork:

  • 500g pork belly or shoulder
  • 1 tbsp oil
  • 1-2  tbsp honey
  • 1-2 tbsp fish sauce
  • 1 tsp dark soy sauce
  • 1 tbsp minced garlic
  • 1 tbsp minced shallots
  • 1 tbsp minced lemongrass
  • ½ tsp white pepper powder

STEPS

  1. Marinate 500g pork shoulder / belly in 1 tbsp oil, 1-2  tbsp honey, 1-2 tbsp fish sauce, 1 tsp dark soy sauce, 1 tbsp minced garlic, 1 tbsp minced shallot, 1 tbsp minced lemongrass and ½ ts white pepper powder for 1 hour or longer
  2. Grill pork over charcoal stove until cooked with charred bits, rest for 2 minutes and cut into slices
  3. Pickle 1 cup shredded carrot and 1 cup shredded daikon in 1 cup vinegar, ¼ cup sugar and 2 tbsp salt.
  4. Slice cucumber into thin strips
  5. Cut 1 french baguette into halves. Spread one side with mayonnaise and the other with pork / chicken liver Pate.
  6. Cut grilled pork into slices and add sliced grilled pork to sandwich.
  7. Add cucumber strips, pickled daikon and carrots, with also pinch of cracked black pepper and coriander leaves.
  8. Fold baguettes and serve
