INGREDIENTS

  • 2 cups rice (soaked for 1 hour and broken up)
  • Water to cook rice
  • 1 Carrot
  • ½ cup vinegar
  • 1 Cucumber
  • 1 Tomato

Pork chop:

  • 2 pieces pork chop around 200g each
  • 1 tbsp minced lemon grass
  • 1 tbsp minced garlic
  • 1 tbsp fish sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp honey
  • 2 tbsp oil
  • 1 tbsp sugar
  • ½ tsp pepper
  • 3 tbsp spring onion (chopped)

Dipping sauce:

  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 2 tbsp sugar
  • 4-5 tbsp water
  • 1 tbsp chopped garlic

STEPS

  1. Add to 2 pieces pork chop (around 200g each), 1 tbsp minced lemon grass, 1 tbsp minced garlic, 1 tbsp fish sauce, 1 tbsp dark soy sauce, 1 tbsp honey, 2 tbsp oil, 1 tbsp sugar, ¼ tsp pepper and 3 tablespoons spring onions (chopped)
  2. Mix well and let it marinate for 4 hours
  3. Wash 2 cup rice and soak for 1 hour. Break rice buy rubbing them with your fingers (skip this if using broken rice), and drain water.
  4. Add enough water to cover the rice and cook in rice cooker
  5. In a bowl add 2 tbsp fish sauce, 2 tbsp lime juice, 2 tbsp sugar, 4-5 tbsp water and 1 tbsp chopped garlic. Mix well and set aside.
  6. Shred 1 carrot and add half cup vinegar. Set aside for 10-15 minutes
  7. Grill pork chops over the charcoal grill, for 10-15 minutes until cooked. Remove and let it rest for 1 min.
  8. Serve grilled pork chop with cooked broken rice, pickle carrot and dipping sauce
  9. Optional to add sliced cucumbers and tomatoes
