Som Tum Recipe (Green Papaya Salad)

INGREDIENTS

  • 2 cups freshly shredded green papaya / 1 medium green papaya
  • 1 tbsp palm sugar
  • 2 tbsp toasted peanuts
  • 2-3 cloves garlic
  • 3-5 bird’s eye chili (adjust to preference)
  • 2-3 tbsp fish sauce
  • 1 tbsp white sugar (adjust to preference)
  • 2 tbsp assam water (optional)
  • 2-3 limes (juiced, adjust to preference)
  • 2 tbsp dry shrimp
  • 1 roma tomato or 3 cherry tomatoes
  • 5 green beans cut in 1 inch length

EQUIPMENT:

  • Clay/wooden mortar and wooden pestle (Thai kind)
  • Metal scoop spoon
  • Knife and chopping board
  • Kom Kom Miracle Knife / shredding knife
  • Peeler
  • Spoons
  • Bowls and small dish

STEPS:

  1. Peel and shred 1 medium green papaya to get 2 cups of freshly shredded green papaya
  2. Add to wooden mortar 2 cloves garlic, 3-5 bird’s eye chili and pound them until crushed
  3. Add 2 tbsp fish sauce, 2 tbsp assam water, 1 tbsp palm sugar, 1 tbsp white sugar and juice from 2-3 limes
  4. Pound and mix until sugar dissolves.
  5. Add 1 roma tomato cut into pieces, 2 tbsp toasted peanuts and 2 tbsp dried shrimps
  6. Add 2 cups freshly shredded green papaya and 5 green beans cut in 1 inch length
  7. Toss and mix well. Adjust seasoning and serve
