Thai Banana Pancake Recipe (Roti Gulay)

INGREDIENTS

1 banana
1 egg
Condensed milk to preference
1 tbsp butter / margarine
3 tbsp oil
Icing sugar to preference 

Dough:
2 cups white flour
½ tbsp white sugar
1 tbsp condensed milk
1 small egg
1/2 cup water
Vegetable oil for coating

EQUIPMENT

Flat wide hotplate / pan
Metal surface to flip the dough
Mixing bowl
Tray
Stove
Knife and chopping board
Spoons
Bowls and small dish
Tooth picks

STEPS

  1. Mix all the dough ingredient in a bowl until a dough is formed.
  2. Knead dough and divide them into 8 golf ball size portions, coat them with vegetable oil and set aside for 30 – 45 minutes
  3. Heat 2 tbsp oil in you hotplate
  4. Crack an egg in a bowl and add 1 banana sliced, mix well and set aside
  5. Flat dough with you hand with some oil, and pull as you flip to create the thin roti
  6. Transfer roti to hotplate, add banana and egg mixture to the center
  7. Fold the side of the roti to cover the banana mixture.
  8. Add a knob of butter on the center and flip the roti, drizzle more oil on the side of the oil.
  9. Cook until crispy on both sides, transfer to cutting board and cut into smaller slices
  10. Drizzle with condense milk and sprinkle with icing sugar
